Method
 

Preparation
  1. Preheat your oven to 200°C (400°F). Roughly chop seasonal vegetables into bite-sized pieces and toss them with olive oil, salt, pepper, and your preferred herbs and spices.
  2. Prepare your chosen lean protein. If using chicken or turkey, season it well. If using lentils or other plant-based proteins, cook according to package instructions.
Cooking
  1. Spread the seasoned vegetables on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
  2. Add the seasoned protein to the baking sheet with the vegetables for the last 15-20 minutes of roasting, ensuring it is cooked through.
  3. While vegetables and protein are roasting, cook your whole grains according to package directions.
