Beef Enchiladas

A hearty and flavorful classic, these beef enchiladas are filled with seasoned ground beef and cheese, then baked in a rich red sauce for a comforting meal.

Ingredients
  

For the Filling
  • 1 lb ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 cup cheddar cheese shredded
For Assembly
  • 12 corn tortillas
  • 28 oz red enchilada sauce
  • 1 cup Monterey Jack cheese shredded
  • sour cream for serving
  • green onions sliced, for garnish
  • fresh cilantro chopped, for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. In a large skillet, brown the ground beef over medium heat, then drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in the chili powder, cumin, salt, and pepper, cooking for another minute until fragrant.
  5. Remove the skillet from heat and stir in the shredded cheddar cheese.
Assembly
  1. Pour about half a cup of enchilada sauce into the bottom of the prepared baking dish.
  2. Warm the corn tortillas slightly in the microwave or a dry skillet to make them pliable.
  3. Dip each tortilla briefly into the enchilada sauce, then place a spoonful of the beef mixture down the center.
  4. Roll up each tortilla tightly and place it seam-down in the baking dish.
  5. Once all enchiladas are arranged, pour the remaining enchilada sauce over them and sprinkle with Monterey Jack cheese.
Baking
  1. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through.
  2. Let stand for a few minutes before serving, then garnish with sour cream, green onions, and fresh cilantro.

Notes

For a spicier kick, add a pinch of cayenne pepper to the beef filling or use a hot enchilada sauce.
