  • 3 cups cooked chicken shredded or diced
  • 4 cups Napa cabbage shredded
  • 1 cup carrots julienned
  • 1 red bell pepper thinly sliced
  • 4 scallions chopped
  • 0.5 cup cilantro chopped
  • 1 can mandarin oranges drained
  • 0.5 cup slivered almonds toasted
  • 0.5 cup chow mein noodles for garnish
Dressing
  • 0.33 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon ginger grated
  • 1 clove garlic minced
  • 0.5 teaspoon sriracha optional

Method
 

Preparation
  1. In a large bowl, combine the cooked chicken, shredded Napa cabbage, julienned carrots, sliced red bell pepper, chopped scallions, chopped cilantro, drained mandarin oranges, and toasted slivered almonds.
  2. In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, grated ginger, minced garlic, and sriracha (if using) until well combined.
Assembly
  1. Pour the dressing over the salad ingredients and toss gently to ensure everything is evenly coated.
  2. Serve immediately, garnished with chow mein noodles for an added crunch, or chill for at least 30 minutes to allow the flavors to meld.

Notes

For extra flavor, marinate the chicken in a little soy sauce and ginger before cooking. You can also add other vegetables like snow peas, edamame, or water chestnuts. If you prefer a nut-free version, omit the slivered almonds and consider adding toasted sesame seeds instead.
