Ingredients
  

Salad 1: Cucumber, Tomato & Feta Salad
  • 1 medium cucumber chopped
  • 1 cup cherry tomatoes halved
  • 1/4 cup feta cheese crumbled
  • 2 tbsp fresh mint chopped
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • to taste salt
  • to taste black pepper
Salad 2: Watermelon & Arugula Salad
  • 2 cups watermelon cubed, seedless
  • 4 cups arugula
  • 1/4 cup red onion thinly sliced
  • 2 tbsp balsamic glaze
  • 1/4 cup feta cheese crumbled
Salad 3: Quinoa & Black Bean Salad
  • 1 cup cooked quinoa
  • 1 can black beans rinsed and drained
  • 1/2 cup corn canned or frozen, thawed
  • 1/2 medium red bell pepper diced
  • 1/4 cup red onion diced
  • 2 tbsp cilantro chopped
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1/2 tsp cumin
  • to taste salt
  • to taste black pepper

Method
 

Cucumber, Tomato & Feta Salad
  1. Combine chopped cucumber, halved cherry tomatoes, crumbled feta cheese, and fresh mint in a medium bowl.
  2. Whisk together lemon juice, olive oil, salt, and pepper to create the dressing and pour it over the salad.
  3. Toss gently to combine all ingredients, then serve immediately or chill before serving.
Watermelon & Arugula Salad
  1. In a large bowl, combine the cubed watermelon, arugula, and thinly sliced red onion.
  2. Drizzle balsamic glaze over the salad and sprinkle with crumbled feta cheese.
  3. Gently toss to mix and serve chilled for a refreshing experience.
Quinoa & Black Bean Salad
  1. In a large bowl, combine cooked quinoa, rinsed black beans, corn, diced red bell pepper, diced red onion, and chopped cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper to make the dressing.
  3. Pour the dressing over the quinoa mixture and toss thoroughly to ensure everything is well coated.

Notes

These salads are best enjoyed fresh. Feel free to adjust ingredients to your taste or dietary preferences. For a heartier meal, consider adding grilled chicken or fish to the quinoa salad.
